Profile
Erin is a chef and registered dietitian who bridges the worlds of culinary arts and nutritional science. Her passion for cooking with fresh produce began in childhood through visits with her Opa and his garden.
After earning her bachelor’s and master’s degrees in Nutrition and Dietetics from Saint Louis University, Erin pursued professional culinary training and worked in restaurants to broaden her culinary expertise. This professional culinary training deepened her commitment to aligning culinary excellence with evidence-based nutrition.
Currently serving as Chef Instructor and Registered Dietitian at Brightwater: A Center for the Study of Food in Bentonville, Arkansas, Erin holds Certified Culinary Medicine certifications and plays a key role in developing the culinary wellness program. She joined Brightwater in 2017 to combine her interests in nutrition, cooking, and teaching. “I love seeing my culinary nutrition students surprised at how delicious healthy food can be,” Erin says. “I especially enjoy those ‘aha’ moments when students have a shift in perspective about what we’re preparing in class.”
In her free time, Erin enjoys gardening and outdoor activities including hiking, biking, running, and yoga.
