About
Courtney is a Registered Dietitian who loves helping people discover how the foods they eat can support their overall health. She serves the Texas South Plains communities of Castro, Hale, and Lamb Counties as the Health Extension Agent with Texas A&M AgriLife Extension Service. She believes that learning about food and health should be fun, approachable, and empowering. Her work includes programs on general nutrition, physical activity, chronic disease and weight management, recipe modification, hands-on cooking skills, food safety education, and community engagement projects. When she is not teaching or creating nutrition resources, you can find her hanging out with her family, cooking with her kids, experimenting with new recipes, or getting creative through painting and crafting.
She earned her bachelor’s and master’s degrees in Nutrition and Dietetics at Texas Tech University, where she also completed her Dietetic Internship. Prior to her role in community education, Courtney was a clinical dietitian for several years. This hospital experience provided her with extensive knowledge in the treatment side of nutrition therapy, which furthermore fueled her passion for nutrition education and prevention. As an extension educator, she now provides community members with access to nutrition education and hands-on learning experiences to better their overall health.
