Beth earned a BSN at Texas Tech University Health Science Center School of Nursing, and before that she earned a Bachelor of Arts in English and a Master of Science in Education. She is currently a registered nurse and certified case manager, although her first career path was in education – first as a secondary teacher and counselor, and then in higher education where she focused on writing and research to support institutional advancement. A significant life event inspired a career change to healthcare, where she has worked bedside in emergency, Preop, PACU, and hospice, and in telephone triage, care coordination, chronic disease management, and case management. In Arkansas, where food insecurity and chronic disease often intersect, Beth’s training in culinary medicine allows her to equip people with practical tools for lifestyle change and to offer a path to healthier communities.
