Breakfast Smoothies for Two

Breakfast can be a hassle in the midst of the hustle and bustle of the morning.  Many people are looking for quick, transportable meals for breakfast, or they will skip it altogether.  The breakfast smoothie is a great solution:  you can prep the blender the night before, take it out of the fridge, give a quick whir and pour it into a go-cup.  The smoothie has a blend of protein and carbohydrates to fill you up and keep your energy levels stable until lunch, and with only 200 calories a serving, it’s a great way to start the morning.

Frozen fruit is not only convenient, it’s also the best thing to throw into a smoothie.  The orange juice adds a little extra sweetness and can be left out if desired.  We are using peaches and bananas, but really any fruit can be used:  great substitutions are a triple berry blend with grape, acai, or pomegranate juice or 2 bananas and 1/2 pound of strawberries with orange or orange/mango juice.

Breakfast Smoothie for Two

1 cup non-fat or low-fat plain yogurt
1 ripe banana, frozen
1/2 pound peach slices, frozen
5 strawberries, fresh or frozen
1/4 cup orange juice (fresh or no sugar added/100% juice)

Place all of the ingredients in the blender starting with the liquid items and adding the larger frozen items last.  Pulse the blender on low speed a few times until the big chunks are broken up, then blend to the desired consistency.

The ingredients can be put in the blender carafe and stored in the refrigerator overnight.  This will help the fruit soften slightly so the blending process will go faster, as well as giving you fewer things to do in the morning.

Keeping frozen bananas on hand makes these smoothies even more convenient.  Simply peel the bananas and store them in a zip-top bag in the freezer until ready to use.  It saves on food waste and is a healthier way to use overripe bananas than banana bread!
